Honey Garlic Pork Loin

From the Farm Kitchen! A family favorite recipe!

LT Farms Meats Pork Loin makes a great low-fat entree for any meal. With a few ingredients you can create a delicious and tender, sweet and spicy roast.

Rub: 2 tsps. paprika (mild or smoked)

1 tsp. brown sugar

1 tsp each garlic powder and onion powder

1/2-1 tsp. red chili powder (optional)

2 tsp. salt

1/2 tsp. black pepper

Honey Garlic Butter Sauce:

1/2 C honey

1/2 C butter

6 cloves garlic, minced

3 Tbsps. soy sauce

2 Tbsps. rice wine vinegar or cider vinegar

pinch of salt

1/2 tsp. black pepper

Pat the loin dry with paper towels, rub it with 1 tsp. of oil and sprinkle the rub over the loin, working it in with your hands. Sear the loin all over in an oiled and heated skillet, rotating it often to avoid burning the rub.

Melt the butter in the same pan you seared the loin in and scrape up the browned bits for more flavor. Add garlic and sauté for one minute. Stir in the remaining ingredients and simmer for one minute.

Preheat the oven to 350 degrees. Place browned loin in a roasting pan. Prepare the above sauce and reserve a half C for basting. Pour the remaining sauce over the loin. Add 1/2 C broth and 1/2 C water to the pan. Cover and roast 20 mins.

Uncover and baste with half the remaining sauce. Continue roasting another 15 minutes. Baste again and continue roasting 10-15 mins. at a time until the thermometer registers 145 degrees in the thickest part of the loin. Remove from pan, baste with the juices and cover lightly to rest for 10-15 mins.

Scrape up browned bits and juices in the roasting pan and whisk in 4 tsps. of corn starch to thicken. Serve with the sliced loin. The pictured meal was served with scalloped potatoes, green beans, cucumber salad and Focaccia bread with melted, smoked gouda cheese.
