Baked Chicken Recipe

Prepare our farm raised chicken for a delicious, nutritious dinner. You can use our pre-cut chicken, or whole chicken and cut yourself. Serve with your favorite vegetables.


LT Farm Meats Pre-cut Chicken comes in a rectangular shaped package which includes 2 thigh/leg portions, 2 wings, a whole breast with the wish bone portion of the breast separate, plus the back and side pieces. I separated the thigh and leg portions at the joint.


Recipe for coating:

  • Bread crumbs (These can be seasoned or not at your preference. Mine were not seasoned)

  • 1/4 C Parmesan cheese

  • Seasoned salt

  • Plain Greek yogurt

Pat the chicken dry and remove skin, then rub yogurt over each piece and roll in seasoned crumb mixture. Place in greased baking dish and roast at 350 degrees until the internal temperature reaches 165 degrees. Serve with sides of your choice. We had roasted red potatoes, a fresh veggie salad and topped it off with Butternut Squash pie.


Chicken Stock:

The bonier portions (wings, sides and back) were covered with water and simmered with vegetables to make a delicious chicken stock for soups, noodles, etc. Cool and remove the solid fat, strain and freeze until you are ready to use it.
