Garlic and Rosemary Grilled Lamb Chops
We like this recipe for a quick and easy grilled supper. I added sweet corn, tossed salad and an apple oatmeal muffin as sides, but the chops would also go well with grilled potatoes and veggies if you want all the cooking mess to be outdoors. These lamb chops are crispy outside, but so juicy and tender inside.
2# Lamb Chops
3-4 cloves garlic, minced
1 Tb fresh Rosemary, chopped
1&1/4 tsp salt
1/2 tsp black pepper
Zest of one Lemon
1/4 C Olive Oil
Trim excess fat from the chops and marinate in above ingredients two hours or overnight. Place the lamb chops over hot coals or hot gas grill. Turn when starting to brown and cook to an internal temperature of 135 degrees (7-10 minutes).
Hint: Try to watch the temperature as the chops will continue to cook for a bit after you remove them from the grill.
