Simple Braised Lamb Shanks

This easy, hearty recipe features LT Farm Meats Lamb Shanks for rich, farm-raised flavor. Slow-braised with wine, herbs, and vegetables, this dish turns out tender and comforting every time—perfect for a cozy dinner.

Ingredients
Salt and pepper, to taste
2 tablespoons olive oil
3 large carrots, sliced
2 onions, chopped
10 cloves garlic, minced
1 (750 ml) bottle red wine
1 (28 oz) can whole peeled tomatoes
1 (10.5 oz) can chicken broth
1 (10.5 oz) can beef broth
5 teaspoons fresh rosemary, chopped
2 teaspoons fresh thyme, chopped
Instructions
Preheat oven to 325°F.
Season lamb shanks with salt and pepper.
Sear lamb in olive oil in a large Dutch oven until browned on all sides. Remove and set aside.
Cook vegetables (carrots and onions) in the same pot until softened. Add garlic and cook 1 minute.
Deglaze with wine, scraping up browned bits. Simmer for 10 minutes.
Add remaining ingredients (tomatoes, broths, rosemary, thyme) and stir.
Return lamb to pot, making sure it’s mostly covered with liquid.
Cover and braise in the oven for 2½–3 hours, until tender.
Serve warm with mashed potatoes or crusty bread.
Notes
Using quality, farm-raised lamb makes a big difference in flavor and tenderness.
This dish tastes even better the next day as flavors deepen.
